Polenta recipe ingredients:
• 400g ready made polenta
• 400g cherry tomatoes
• 400g button mushrooms
• 6 large pork sausages
• 100g finely grated parmesan
cheese
• 1 clove of garlic (finely
chopped)
• Mixed italian herbs
• Light olive oil
• Ground salt & petter
This polenta recipe is about as easy as it gets. It takes a few minutes to put together and then you get to just leave it in the oven to turn ace.
1.Put the sausages under the grill and while they're browning, break the polenta into bite size chunks and scatter into an oven proof baking dish.
2.Cover in the parmesan cheese and evenly distribute the cherry tomatoes, chopped garlic and button mushrooms on top.
3.Drizzle it all with the light olive oil and sprinkle the herbs on top before giving it all a few twists of salt and pepper.
4.Once the sausages are slightly browned on all sides, place them on top of the polenta, mushrooms & tomatoes dish and cook in the oven for around 20 to 25 minutes.
5.And that's it. Job done. If you want to give it an added kick of vegetables, then yellow peppers and courgettes are probably the way to go, which would take it up to 4 of your 5 a day in each serving.
