Spaghetti a la salmone affumicato (spaghetti with smoked salmon)

Ingredients (per person):
• 100g smoked salmon (salmone affumicato), chopped into thin strips
• 100g creme fresh
• A handful of chopped coriander
• 4 baby courgettes
• Olive oil
• Salt and pepper
• 1/2 tsp turmeric
1. Chop the courgettes into thin sticks and fry on a high heat in the olive oil with a little salt and pepper and the turmeric.
2. While the courgettes are cooking, put the pasta on to boil with a pinch of salt and a small splash of olive oil.
3. Once they are cooked through, add the coriander and toss in the pan for a minute over the heat.
4. Remove from the heat and let the pan cool a little before pouring on the creme fraiche. Stir in and return to a low heat.
5. Add the strips of smoked salmon and give it all a stir. You don’t want to let the salmon cook too much, so turn off the heat and crack on with the next couple of steps pretty rapidly.
6. Drain the pasta and return to the saucepan.
7. Either serve with the sauce on top, or pour everything into the sauce pace and mix it all together. All in, this shouldn’t take more than fifteen minutes to magic up, but it looks and tastes ace.
